I just got a Meowscarada model kit from the Bandai Spirits collection, which was a lot of fun to build and as a result I have a pose-able figure to display that I know I put together myself.
Here she is in the full finished glory.

Even so, it was a lengthy build process. Even if this set is intended for children, there were a lot of fiddly parts and very small stickers to apply. Starting with the head.

Progress steadily being made as I apply the head to the torso, it gradually starts to take shape.

HIGHLY IMPORTANT DETAIL!!!

With the legs applied, you get a really good idea of the model's scale.

This was the fiddliest part, the black parts on the paw's fingers were each individual stickers, as well as the paw pad. I had to do this twice...

And viola! She is assembled!

Pokemon kits are probably very easy, as I said, this was made for children to take on and build, so if you're interest they're probably a very good start.
